STORY BEHIND THE TEA

“Maromi“ is a very special Kamairicha named after Shimoda-sans daughter and we are very proud to have it in our sortiment as an ANMO Exclusive. It is a very high quality Kamairicha, yet unlike others it was shaded like a high quality Kabusecha or Gyokuro giving it more umami and sweetness. Steeped with lower temperature water it develops a thick, oily mouthfeel and potency comparable to other shaded Japanese teas. Yet it maintains the characteristic 釜香/kamaka/”pan-aroma”, adding another dimension of taste. We are always surprised how well produced this tea is, although there is almost no culture of shading teas in Kyūshū.

Shimoda Chaen always delivers high quality teas ranging from classics like Kamairicha and Houjicha to newer products like Wakōcha/Japanese Black Tea.

About Kamairicha

Kamairicha is a special genre of Japanese green tea, which only makes up a few percent of the nationwide green tea production.

For the Kill-green/ 殺青 /sassei step of production the leaves are traditionally and in contrast to Sencha not steamed but, as the name implies, fried (炒る/iru) in a big pan or cauldron (釜/kama) making it more alike to Chinese or Korean greens. The focus of Kamairicha is more on the often lush aroma and sweetness than on a burst of umami and grassiness as in modern Sencha styles of production.
