STORY BEHIND THE TEA

In Japan the label “tokujō” is only used for the highest grade of tea from a particular producer or tea shop. This Kamairicha lives up to its name. With only the youngest buds and leaves used this tea is very rich in taste and aroma. When steeped with lower temperature water you get a very nutty and umami-sweet tea, when steeped at higher degrees more of the pleasant bitterness and 釜香/kamaka/”pan-aroma” come out, which is both characteristic and sought after in Kamairicha. A very flexible and high quality tea.

About Kamairicha

Kamairicha is a special genre of Japanese green tea, which only makes up a few percent of the nationwide green tea production. For the Kill-green/ 殺青 /sassei step of production the leaves are traditionally and in contrast to Sencha not steamed but, as the name implies, fried (炒る/iru) in a big pan or cauldron (釜/kama) making it more alike to Chinese or Korean greens.The focus of Kamairicha is more on the often lush aroma and sweetness than on a burst of umami and grassiness as in modern Sencha styles of production.
