White tea can be described as the purest and least processed tea. Traditionally only hand-plucked and sun-dried it retains the characteristics of the raw tea-leaf and the aroma of slight, natural withering. There are differnet grades of plucking from only the first buds until more mature leaves, which are recently pressed into cakes and ripened over several years, all relatively low in caffein.
When fresh Chinese white tea is loved for its smooth, pure and floral taste, when ripened for its intense sweetness, fruit notes and body.
