I can only recommend everyone who is interested in this new mini cake addition to our program to also order the 2012 Shanghai La cake small package in chunks to check out the wonderful aging abilities. In the past few years, Sun Sing Tea mainly produced good quality teacakes from the old big trees. However, due to limited production the cost became higher and higher every year. In order to maintain the balance between quality and cost, we investigate tea materials from different regions. After several challenges, Huang Shan tea is chosen by Mr. Kings Yeung. Since the land is inaccessible due to the remote region and the tea material is hard to gather, Mr. Yeung suddenly thought of a famous poet, Mr. Tao Yuan Ming, which he had a poem related to Mr. Yeung’s experience. Thus, the teacake was named “Tao Hua Yuan” to describe the teacake's origin from a natural and unpolluted environment. The first batch of the teacake is combined with spring and autumn tea, which has strong and tender leaves. The age of the tea tree might be one of the reasons that the taste perception and aftertaste is not as rich as MaHei and Luo Shui Dong, but it has a much sweeter taste. The process of picking, killing green, drying and compressing is followed by Mr. Kings Yeung’s special method, it helps to accelerate the aging process. The taste and aroma of this tea gradually changes after a few months of storage in Hong Kong. |
